I have used this book as a guide and reference for home winemaking for over 30 years. It has the basic science and practical knowhow that you need. It is based on Eastern US grape supply, but works well for California as well.
Included are data tables and instructions for adjusting sugar and acid, acid titrations, SO2 addition and titration, and specific gravity conversion to degrees Brix.
