Product Description

From the experts, the definitive book on home preserving.

Ball Home Canning Products are the gold standard in home preserving supplies, the trademark jars on display in stores every summer from coast to coast. Now the experts at Ball have written a book destined to become the "bible" of home preserving.

As nutrition and food quality has become more important, home canning and preserving has increased in popularity for the benefits it offers:

  • Cooks gain control of the ingredients, including organic fruits and vegetables
  • Preserving foods at their freshest point locks in nutrition
  • The final product is free of chemical additives and preservatives
  • Store-bought brands cannot match the wonderful flavor of homemade
  • Only a few hours are needed to put up a batch of jam or relish
  • Home preserves make a great personal gift any time of year

These 400 innovative and enticing recipes include everything from salsas and savory sauces to pickling, chutneys, relishes and of course, jams, jellies, and fruit spreads, such as:

  • Mango-Raspberry Jam, Damson Plum Jam
  • Crab Apple Jelly, Green Pepper Jelly
  • Spiced Red Cabbage, Pickled Asparagus
  • Roasted Red Pepper Spread, Tomatillo Salsa
  • Brandied Apple Rings, Apricot-Date Chutney

The book includes comprehensive directions on safe canning and preserving methods plus lists of required equipment and utensils. Specific instructions for first-timers and handy tips for the experienced make the Ball Complete Book of Home Preserving a valuable addition to any kitchen library.

5 out of 5 stars Must Have! - Great Canning Info with Variety of Recipes   September 30, 2008
New Grilling Book. 2nd Edition

This is an excellent canning book. I checked this book out at my library 2 years ago & learned how to can. I am addicted to canning and had to buy my own. All the recipes I have tried have been excellent. I have several books on canning and this is by far the best.

I recently found The New Grilling Book by Better Homes & Gardens on sale for $4 and grabbed it just because it was a great price. I took it home and was happily suprised. It has hundreds of grilling recipes that use jams-marmalades-fruit preserves as the base for many of their marinades & sauces. I like to give recipes with my jams/preserves to friends and family and these are a great addition.

4 out of 5 stars Comprehensive basic canning   September 12, 2008
2 out of 2 found this review helpful

I regard this book as a comprehensive basic book. Most of the book consists of recipes suitable to putting food up via either boiling water or pressure canning. It covers basic procedures for both. It is NOT as broad as the book suggests, however. A true "complete book of home preserving" would require volumes - even without recipes. You won't find drying, salting, root cellar storage, vacuum or inert gas preservation, or the myriad of other preservation techniques in this book. Rather, the focus is on the types of preservation for which Ball makes their products (surprise, surprise!), but also, to be completely fair to Ball, the types of most interest to the most people. Well worth while. Just be aware that you are really buying a cookbook. Boiling water and pressure canning techniques themselves can be covered in just a few pages, as they are in this book.
