My Italian girlfriend got one of these, and I thought it was going to be a pain in the neck to use and to clean up, but it's easy to work, clean-up's a cinch, and the pasta it makes is far better than anything I've ever had from a box.

We use Marcella Hazan's recipe for pasta dough (she spells out what the dough is supposed to look and feel like when it's done), and it has been delicious every time. I notice too that this machine is somewhat less expensive than a few other pasta makers on Amazon, but there's no need to buy a $60 or $70 pasta maker when this one works fine.

A few hints about the making of the pasta:
1. Once you buy a pasta maker, you might be tempted to simply mix your dough in a food processor, like a KitchenAid mixer. Don't do it! Better, far better, to knead it by hand if you can. It only takes a few minutes (again, I recommend Marcella's recipe; she tells you exactly what to do) and it comes out better this way, believe me. Be careful: If the dough is too wet, it will be sticky and make a mess of your pasta maker.
2. It helps to have someone assist you with guiding the dough/pasta as you crank it through the machine. When you make it you'll see what I mean.
3. Once you're ready to boil your pasta, take note: It's so light that it will cook in a fraction of the time that store-bought pasta does, so be aware! Leave it boiling in the pot too long and you'll ruin it.
4. That said, the pasta this machine makes is somewhat delicate, and if you're making a really heavy, hearty dish that requires heavy-duty noodles, this might not be the best pasta to use. (That said, the fettucine you can make with this pasta maker is PERFECT for pesto.)

I bought this to make chinese noodle. I use it nearly every month. It is small, convinent to use. However, it is hard to find a place to fasten it when use. If not fasten well, it will move around in using. I just fasten it to a thick wooden board and it works.

I got this pasta maker as a gift, and after the first use the knob used to set the thickness of the pasta broke off and so did a piece of the handle used to turn the rollers. All it would make after that is a flat piece of pasta with varying thickness. The company is going to charge me to send it to them and back, even if they decide to exchange the product, and all correspondences must be done by mail (no call-in number) so I'm not even hopeful for an exchange.

I was very pleased with the item. However, it is good to know that the machine can only handle small amounts of pasta at one time, so the process is a bit time consuming.
