Splendid examples of why modern, safe pressure cookers are popular with contemporary cooks, the 5-1/4-quart pressure cooker and 2-1/8-quart pressure frying pan in this set quickly and healthfully cook foods with trapped steam at temperatures higher than boiling. Two lids, which fit both pans, are included--the pressure lid and a glass lid--so one pan can be used to cook under pressure while the other is used conventionally. Made of heavyweight, mirror-finish, 18/10 stainless steel, each pan has two handles and an aluminum disk sandwiched in stainless steel in its bottom to quickly and uniformly conduct heat.

Using a pressure cooker saves time and 70 percent of the energy normally consumed while cooking. Pressure-cooking requires little water so nutrients, flavor, and color are not boiled away. Vegetables emerge vibrantly colored. Stews, soups, beans, even meat loaf and pork chops and desserts like bread pudding come out tasty and nutritious. (A detailed instruction booklet containing dozens of recipes is included.) Meats can be browned before the pressure lid is locked on. The pressure lid's valve stem shows high and low pressure so heat can be adjusted for different foods. Safety measures abound for the pressure lid. A rubber gasket ensures a tight seal. A vent releases steam if pressure builds too high, as does a valve that also locks the lid when any pressure whatsoever is inside the cooker. Cleanup is a bit involved. 4 out of 5 stars Imperfect but without an alternative   August 16, 2008
I am writing this review after six or so years of use. First, two defect that many people have mentioned - valve cover with three plastic legs breaks easily (mine broke in a few days), I changed it a few times and now I do not bother with it any more. Second, the plastic handle, specially on the smaller cooker are too low, and on high heat they melt. Mine has cracks and looks ugly. They will get really hot even if a near by burner is on high.

After several years of use, I have steam leaking from all the valves. I have cleaned/replaced them once, but they are not as good as they originally were. I guess I will replace them once more. It is a difficult decision though since these parts cost almost as much as a brand new cooker from other vendors.

I'm a single fellow who prefers to cook than eat out. I have been bowled over by this product and it's convenience. Because I cook for one, I mostly use the frying pan with complete satisfaction. I make different chilies, bean dishes (re-fried, hummus, etc.), roasts, soups, vegetables; the list goes on. I cook up a week's worth and I'm off to the races. I do like to read the reviews (specially the lower ratings) to see what I must be conscious of when using the product. So far, so excellent, folks. I plan on buying this brand (not necessarily this combination) for my children's families.

THIS IS NOT THE UNIT I ORIGINALLY WANTED. HOWEVER, I AM VERY IMPRESSED!! THE UNIT IS SO QUIET !! IT HOLDS A LARGE CAPACITY, SO DINNER IS DONE FOR SEVERAL DAYS!! EASY, EASY, CLEANUP ! I HAVE FOLLOWED THE " NO SALT " RULE & SIMPLY SEASON WITH SALT AFTERWARDS IN ANOTHER PAN. I WOULD DEFINITELY RECOMMEND THIS PRODUCT FOR VALUE & PRICE.

There is a bit of a learning curve when attempting to pressure cook items that might be better cooked conventionally, but man, it consistently cooks the best brown rice, I finally mastered polenta and beans are a successful no-brainer. My Boston baked beans recipe takes seven hours in a crock pot, 45 minutes in the pressure cooker and I thought they tasted better. Onions can taste boiled in the pressure cooker so generally I saute them and then lift them out of the oil or butter and set aside for adding later. The shortened cooking time by no means reduces the flavor of conventional long-cooked recipes. The shortened cooking times are truly astonishing and absolutely have to translate to a reduction in your energy bill. The cooker cooks at such low temperatures that my electric burner just barely achieves that low a temperature. I was a little nervous about the concept in my first go-around, but that vanishes fast. My Sitram cookware is collecting dust!

I used this set for 2 years now. Here is a short summary on different kinds of food cooked:
Pork / Cow / Lamb Stew - Tender and great flavor in 45 minutes, low pressure
Soup with bones - Rich flavor in 2 hours, low pressure
Bean sweet soup - Beans are all broken down as wanted in 2 hours, low pressure
Brown rice - Too watery, hard to control, same time as normal rice cooker
Vegetables - Easily overcooked; with practice, cooked in minutes

About their customer service, it was perfect. My first set was used for 3 months and there is a small crack between the aluminum sandwich and I asked for an exchange from Kuhn Rikon. It was prompt and easy.

The small lid near the valve does easily broken with that plastic. Mine is broken now. I recommend not to take that out to clean often or with extreme care. It is not that really functional apart from shielding off the stream.
