I don't have any experience cooking Moroccan cuisine but have been intrigued by the tagine for a while. I eventually broke down and bought one, and couldn't be happier!!!! First try with my new tagine and received many rave reviews from some picky/brutally honest friends/family!

The tagine was very easy to use, and more amazingly it was SO easy to clean after the meal! (I thought with the sticky ingredients, and almost 2 hour cook time that it would be baked on but it seriously came right off!!!)

I didn't experience any liquid pouring over or spitting out as one reviewer mentioned but I will experiment more and see what happens!

As many other reviewers have mentioned - The Honey Chicken was great!

I would start by saying that I have never cooked with a traditional tagine. However, I've had some great luck with the Le Creuset tagine. Based on the many reviews I've read here, I feel that an important element is that you reduce watery elements more than you normally would prior to adding the meats or major vegies. For instance, making a Moroccan meatball dish, I cook the onions and tomatoes longer than I might normally before adding the uncooked meatballs and covering the dish. This eliminates any problem with moisture spitting out of the sides of the tagine (hasn't happened to me yet). Just remember that little moisture is necessary. And yes, I add an ice cube to the top now and again, and I'm not entirely convinced it changes much, but I keep experimenting.

Because I began using a whole new set of Moroccan dishes when I purchased this tagine, and this has included a wide range of spices, it's hard for me to know from whence my excitement springs. But I've really enjoyed using it and making and eating these dishes. I cook more than my wife does, and she wants me to use it all the time.

I would also add that I am a fan of cast iron, the cheaper kind without the Le creuset enamel. The upside of this tagine is that the matte enameled surface is non-porous, so today's dish is not flavored by yesterday's. But this is also a downside, according to me. I rather enjoy knowing that the cooking implement is growing in flavor and is a sum of many nights' cooking.

The other reviews that complain about its small size have a point. It can't do anything larger than for four. My wife and I have enough left over for one more meal (four people at one meal, or two people at two meals).

On the stove, it looks amazing. Very dramatic presentation at the table.

On the whole, I highly recommend this item.

I received this tagine as a gift and am slowly learning about Moroccan cooking, so that I can use it as much as possible. While the design of this tagine is a bit different than traditional styles, it is very easy to use (as it's designed to be used on the stove, rather than in the oven) and cooks extremely well. Every bite of food is infused with flavor when you use this product and I haven't had any problem with food sticking or burning. I haven't cooked any meat with this tagine, but it's amazing how good a couple of cans of chickpeas are when cooked in it. It could perhaps be a bit larger; I'd say that it makes dinner for 5 adults. But honestly, since it does take up a lot of storage room, I like the size.

Some suggestions: use a REALLY good quality harissa paste when cooking and give your food as much time to cook as possible. the lower the setting and the longer it cooks, the better your dish will be. also, don't add too much liquid at first. You can always add more, but the stock/water really will not evaporate in this tagine.

I love this item! I used it a couple of times already and the chicken was the best that I ever had! I couldn't believe that it does everything that it says it does! The food is tender, flavorful - even the next day! This is the best thing I have added to my kitchen in years!

I have found this to be valuable addition to my kitchen. I am interested in Mediterranen cooking and this is a traditional form in Morocco. This is a low-fuel cooker, never used above a medium setting on a cooktop and used to simmer for long periods on low or very low. Uses very little liquid with the unique Tagine shape; do not overfill or you will have a mess. This is a great way to make stews and braises! Long cooking allows flavors to mingle. It cooks for 4 but is not big enough to serve large groups unless used in a multi-course meal; a bigger size would be nice to add. Would love to have more recipes.
