Product Description
Precision Forged Steel / Stainless / Perfect Balance / Made in Germany

Amazon.com Review
One of the newest premium lines from Zwilling J.A. Henckels, Twin Cuisine was introduced in 2004 with a major revelation: it's the first high-quality forged cutlery line to feature a molded handle with a visible, full-length tang that runs horizontally. In fact, the handle is absolutely stunning, with the shiny tang curving slightly as it courses through the black nonslip polypropylene. With no rivets or gaps, the ergonomic handle provides seamless comfort, while the full tang adds weight for precision balance. The single-piece blade, forged from high-carbon, no-stain steel and strengthened in Henckels's exclusive Friodur ice-hardening process, retains its sharp edge through extensive cutting and chopping. Made in Germany and covered by a lifetime warranty, Twin Cuisine knives are dishwasher-safe but are best cared for when washed and dried by hand.

One of the handiest kitchen knives around, the Twin Cuisine 4-inch parer performs those everyday tasks such as peeling and slicing an apple for lunch or cutting a wedge of cheese for a quick snack. The sharp point digs out brown spots from fruit and vegetables, and the small size is nimble enough for carving carrot rosettes and other garnishes. A pleasure to use, this versatile parer makes an excellent gift for any seasoned or aspiring chef. --Ann Bieri

From the Manufacturer

Twin Cuisine is the first quality forged knife to combine the comfort of a truly ergonomic, molded handle with the precision weight and balance of a full horizontal tang. Plus, the Twin Cuisine's exclusive, award-winning patented handle design is a new standard in fine cutlery (U.S. design patent #D524,121). The series is available in many styles for numerous cutting tasks. Twin Cuisine is also available in a variety of block sets and gift sets. The Twin Cuisine series truly is a masterful blend of form and function.

A Higher Standard in Knife Construction

Twin Cuisine knives are traditionally forged from a single piece of J.A. Henckels's exclusive high-carbon, no-stain steel formula. The result is a knife with high durability, professional strength, and weight. Twin Cuisine also uses J.A. Henckels's Friodur ice-hardening process, which results in a blade that has excellent cutting-edge retention and corrosion resistance. The blade edge is precision honed and laser controlled to maintain a sharper and consistent blade angle.

New Ergonomic Handle Technology

The Twin Cuisine handle features exclusive new and innovative handle technology: a full horizontal tang without rivets. High-impact polypropylene is bonded with J.A. Henckels's high-carbon, no-stain steel, resulting in a remarkably comfortable handle with a smooth shape and no gaps. The world-famous Zwilling J.A. Henckels logo is etched on the end of every Twin Cuisine knife handle, indicating its quality.

Features

  • Traditional one-piece hot drop-forged construction: Provides high durability, strength, and weight.
  • Laser-controlled edge: Is sharper and stays sharper longer. Has a more consistent blade angle.
  • Friodur ice hardening: Maximum no-stain properties and more blade strength. Improved resistance to corrosion and pitting.
  • Super bolster: Provides weight, insures safety, and adds balance.
  • New, patented full horizontal handle tang without rivets: Provides a strong, smooth, comfortable handle with great control and balanced design.
  • High-carbon, no-stain steel, an exclusive J.A. Henckels formula: Nonstaining, nonrusting.
  • Precision-honed blade: Is sharper and stays sharper longer.
  • Dishwasher-safe: Easy care (although hand washing is recommended by J.A. Henckels).
  • Full warranty: J.A. Henckels stands behind all its knives.

5 out of 5 stars Very heavy for size, Sharp, overkill?   July 26, 2008

We needed a good pearing knife after a tip broke on ours and someone threw it out. After reading reviews of the China based Henkels, I decided since this is one size we use daily, why not spend a few extra and get the real thing. Its been a good one, and was super sharp and the thing is really quite heavy for its size, not a bad thing. Substantial is one way to look at it. Its a good one.

5 out of 5 stars Nice knife, very substantial   April 10, 2008

This is a great knife, after trying many paring knives I chose this one. I love the way it has a full size handle, most of my knives are from Shun but their paring knives have handles that are too small and uncomfortable to me, whereas in this series the handles are all nearly the same size.

Also this knife has considerable heft for a paring knife, all of the knives in the twin cuisine series are quite heavy, with much of the weight stemming from the full tang handle. In the case of the paring knife I think this is great, but I think it throws off the balance of some of the larger knives such as the chefs knife and santoku of this series. But of course knife preference is very subjective so I would recommend feeling and trying them out in person.

5 out of 5 stars Excellent Knife   December 31, 2007

This 4" paring knife is easily one of the best available. The grip is well contoured and rests comfortably in the hand. The blade is razor sharp and thanks to a special process of ice-hardening it should remain so for quite some time. For those who will use the knife often enough, it's a good idea to buy the J.A. Henckels TWIN Pro 'S': 10" Sharpening Steel 32555 260 to help retain the edge almost indefinitely.

This is a small lightweight knife that is perfect for cutting cheese, apples, and other small items. Sometimes you not only don't need the heft of a big chef's knife, but only a small nimble blade will do the trick.

There are many knives available for a lot less money than the Twin Cuisine series. Unfortunately, cheap knives will never take and hold an edge like this one will. Try this knife just once and you'll be hooked on Twin Cuisine for good.

5 out of 5 stars Excellent Professional Knife   December 10, 2007

I have older (1996) Henckels Twin Star knives. They were the first knives to feature the one size ergonomic handle regardless of blade length. Awesome handle, but these knives also featured ceramic coated blades that do not need sharpening. They were the best knives at the time of purchasing and also wildly expensive. After 12 years of commercial/home use these knives are still sharp but I still don't like them...nobody does and that's why they don't make them anymore. But the handle was amazing and is still used in top of the line Henckels knives.

The Twin Cuisine line is the best knife by Henckels except for the Twin Select which is basically the same (same price) except for a complete stainless handle, and the Twin Cermax which is a special Iron Chef edition that is for the Rich chefs with rich pockets. I'm talking $250/knife here. It's the Rolls Royce Limited Edition of knives...nobody will be buying these.

My paring knife tip broke off because the ceramic made the paring knives brittle. So Henckels replaced it with a Twin Cuisine. Henckels has awesome warranty for life should you ever require it. It's good to see the ergonomic handle on a top of the line knife with a regular edge that can be steeled on a daily basis. The prices are also reasonable on a knife of this quality compared to 10 years ago.

For the serious home chef or professional cook I'd definitely recommend these. It's the type of knife that could be in your family for 100's of years. There are other quality knives from companies like Trident, Global, etc... but I have experience with Henckels and their lifetime warranty is hassle free. I would not hesitate to recommend anything from the Twin Cuisine or Twin Select line.

Fun Facts. Henckels knives from Solingen Germany will say Zwilling on them and have the 2 man logo on them. This means they are the professional line. The ones you see in department stores and such are not marked Zwilling and only have the 1 man logo. They are the value lines not designed for restaurants. I have also worked with many top chefs and many of them prefer Trident knives. Do not be scared to order another brand..I do however highly love and recommend these with the ergo handle.

5 out of 5 stars a great, great knife   July 16, 2006

I really love this knife, especially the handle. It form fits into my palm and has a decent satisfying heft to it that some of my larger chef's knives just don't have. When I'm looking for a knife, I'm looking for this one every time. It's also managed to keep a good edge for quite a long time. I think you'll be happy if you buy this one, and if you're like me, you may even want to replace all of your knives with this line. Can't recommend it highly enough.
