The knife's compact size makes it easy to handle while a uniquely arched blade curves to meet the shape of many fruits and vegetables. Measuring 2-1/2 inches in length with a piercingly sharp tip, this tool is a favorite when precision is a priority.

Leveraging a 90-year history of superior workmanship, Shun knives are precision-forged in Japan by renowned blade manufacturer KAI. Using technologically advanced processes, a VG-10 "super steel" core is clad with 16 layers of high-carbon stainless steel to produce a rust-free Damascus-look blade. The Damascus detailing not only enhances the knife's aesthetic appeal, it also prevents morsels from sticking and avoids crushing or damaging foods. Forming a comfortable D-shaped hold, a fused blend of hardwood veneers and resin comprise the unique ebony Pakkawood handle. A traditionally offset stainless-steel bolster protects knuckles while a steel end-cap finishes the piece. Although dishwasher-safe, hand washing is recommended. The Bird's Beak Paring Knife may seem unassuming at 2.5-inches, but its rounded blade produces amazing garnishes from vegetables and fruits. Use it to peel and pare uniquely shaped foods such as gingerroot and fingerling potatoes. Made in the ancient city of Seki, Japan, Shun knives rely on extremely sharp blades, made of Japanese VG10 steel clad with 32 layers (16 on each side) of a proprietary blend of high-carbon stainless pounded so thin, it delivers precision slicing, cutting and chopping that is unprecedented by any of its German competitors. Imagine, a knife made the same way as ancient Samurai swords, handcrafted still today. Sharper out of the box than other knives, the Shun Classic maintains its sharpness longer, since the finely-polished blade edge has a natural tendency to remain straighter, yet when required, it can be honed using a standard steel or sent to the factory for free sharpening. The wavy, Damascus-look pattern on the blade creates minute air pockets that offer stick resistance, so food releases easier and prep time is reduced--plus it's rust-free. The ebony Pakka wood handle, a highly durable combination of layers of white birch wood and resin, is designed in a ???D??? shape to fit firmly and comfortably in the hand, with the bonus of being dishwasher safe and NSF approved for commercial kitchens.

Surgically sharp. Watch that you not use your thumb to anchor the handle as you cut. That little curve that rises above the base of the handle is brutal.

Great for radishes and small items where the accuracy and control of the reverse curve blade are required. Also dynamite for removing the lead seal on wine bottles. "Sharp as a Shun" should be part of the vernacular. I love this bird's beak and use it more than I had imagined I would.

I have a lot of experience using various brands of kitchen cutlery, including some from relatively obscure Japanese manufacturers, and I truly believe that this is the best bird's beak knife on the market. The most important thing in selecting a bird's beak knife is sharpness, and Shun knives are certainly among the very sharpest on the market today. The only comparable knife that I have used is the Global bird's beak knife, but this one has a much more comfortable handle than the Global does. Additionally, the Shun bird's beak knife is balanced better than the Global, and significantly sharper than similar knives from Wusthof and Henckels. There is also a Shun Stainless bird's beak knife, with the only difference being the stainless steel handle. Although not every kitchen absolutely needs a bird's beak knife, I highly recommend this one for those that do want one for peeling tough vegetables such as turnips and for specialized decorative garnishing.
