The San Moritz series cutlery from Messermeister are one-piece fully forged from a single blank of steel. San Moritz knives feature a comfortable, contemporary, molded-POM handle (durable Polyoxymetholene) that's ergonomically designed for maximum comfort in the hand. Messermeister cutlery is made from high carbon no-stain molybdenum vanadium tool steel. The San Moritz and Meridian Elite series knives have the sharpest edges of all forged cutlery. An elaborate 3 step sharpening process is enhanced in it's final step by being carefully hand-polished. There's also a personalization plate for engraved initials. Messermeister was founded over a century ago in Solingen Germany. Gift boxed. Lifetime warranty from Messermeister plus free lifetime sharpening and reconditioning. Handcrafted in Germany. This chef's knife has a broad blade (at 2 inches, it's a bit wider than many manufacturers' blades) and a curved edge for rocking through a chopping task. The 8-inch blade suits most cooks. The knife is from Messermeister's first-rate San Moritz line. Forged from a single piece of high-carbon stainless steel, the blade has a shortened bolster, so it's sharp from tip to heel and a cook's forefinger rests comfortably on the blade. Molded from a polymer that won't crack or warp, the handle is tough and contains a nearly full tang. The plate on the handle's end for engraving initials bespeaks this German manufacturer's reputation as a supplier to professional chefs. To keep the blade sharp, it's best to hand wash this knife in soapy water. --Fred Brack
