An excellent pan! July 16, 2008
I bought this pan recently, and used it few times since. It's the first Scanpan product I own, and I am immensely pleased with it. It's heavy, strong and very very non-stick. I have fried many things and nothing gets stuck on it. You can remove the residue with your finger! The heat conductivity is very good, so the food gets cooked evenly on the whole surface.
I'm definitely going to buy some more Scanpan products!

best fry pan around December 31, 2007
Scan Pan makes the best fry pans I have ever used, and I've spent many years working in restaurants, in addition to cooking frequently at home. The pan bottom is COMPLETELY level (flat), which is surprisingly hard to come by. The heat distributes evenly, and always performs beautifully. The 11 inch pan is a good multi-purpose pan, though I recommend the 12" for larger meals, pancakes, etc. There are also lids available, I believe they may be made by pyrex. (nice fit and pretty durable.) The only drawback (for those used to using it), is that you should not use cooking sprays on the pan. However, it's easy enough to drizzle in some oil or butter. I highly recommend this pan, it's TOTALLY worth the price.

The Best Non-Stick Pan out there March 20, 2007

I bought this scanpan after purchasing the smaller 9 in version. I hate most non-stick pans because no matter how much you pay, the non-stick coating wears off and you have to baby them. Not so with scanpan. These pans are remarkable. Non-stick MATERIAL, not a coating and you can use any utensil on them. Well worth the investment. I plan to slowly replace most of my pots and pans with scanpan.

This pan is absolutely flawless. There is no nonstick coating just a really nice, thick surface that is ridiculously non-stick. You actually have to be a little careful sauteing, or your food will fly off the pan because it is so non stick.

I havent had to scrub this thing once yet, all you do is but in a few ounces of hot water and steam it up, gets clean as a whistle.

Try Scanpan New Tek Instead August 22, 2004

We bought the full Chef's set of Scanpan Classic cookware because of concern that Teflon (PTFE) non-stick surfaces may harm our birds. This was a decision that brought peace of mind to the household, but meant a lot more time cleaning .... and, yes, I did read all the directions and seasoned them correctly and used the special cleaning pads that come with them. I have always used them per instructions. These pans simply do not act like true non-stick coatings! They are better than aluminum, copper or steel, and are about the same as anodized aluminum. However, the Classic non-stick coatings are nothing like Teflon coatings. Protein, eggs, and grains stick. Burned meat is especially hard to remove.

I have had my Scanpan Classics through 9 years of hard scrubbing and scraping, and I am now replacing them with Scanpan New Tek. The New Tek works as well as Teflon. I have been as delighted with Scanpan"s New Tek line as I was disappointed in their Classic.
