3 out of 5 stars WARNING: NOT Induction stove-ready!   June 29, 2008
I have to give the Calphalon Contemporary cookware 3 stars because while they're beautiful, feel nice in the hand, and seem well made, they do NOT work on an induction (aka, electromagnetic) stove (requires magnetic cookware) even though they're supposedly stainless steel. I bought several pieces, popped them on the stove, and the stove didn't "recognize" them at all. I checked them with a magnet, and sure enough, there seems to be almost NO iron in them (either the stainless exterior & interior is very thin or it just has a low iron content). Needless to say, I was VERY disappointed and have to return them all. I'm sure they're great for standard electric or gas.

Check out http://theinductionsite.com for more info on induction stoves. They are incredible - 85-90% efficient (vs. 40% efficiency of gas! and ~70% efficiency of regular electric) with the instantaneousness of gas (instant on/off and high/low). It energizes/heats the pot/skillet itself instead of heating the air (like gas) or an element (like standard electric). Because of that, it doesn't waste any energy, no matter how small the pot. They're extremely safe (if anything drops on the "burner," it won't catch fire; you can't burn your hand, etc.), again because it ONLY interacts with iron. The downside is it only interacts with iron :) so you need stainless steel like All-Clad (which IS magenetic, unlike the Calphalon Contemporary) or cast-iron (like Lodge or Le Creuset).

I hope this saves at least one other induction cooktop owner the same hassle of buying/returning.

I purchased this set of calphalon cookware based on the reviews and the strong brand name. Huge Disappointment!!! The pans look beautiful as you take them out of the box. Take a picture because they will never look this nice again unless you enjoy polishing your cookware after you wash it. These pans show water spots everywhere! But on to the reason you are thinking of buying them. The first night I had them I cooked (steamed) broccoli in the 2qt sauch pan. After 5 minutes of steaming I pulled the lid off and burned the heck out of my fingers! The pot lids get scorching hot!!! Thanks for telling me calphalon. The next morning I decided to make scrambled eggs in the omelet pan. I carefully reviewed the cooking instructions as I had learned that calphalon is rather tempermental. After buttering and heating the 10" omelet pan and letting the eggs reach room temperature I began cooking the eggs. They proceeded to stick to the pan like epoxy glue! I've never experienced anything like it. I had to soak the pan for two days to get it clean. I called calphalon and they told me that "yes" the lid handles get quite hot because the glass conducts heat and it is absorbed by the metal in the handles. Thanks for the science lesson, my burnt fingers feel much better now. I asked them about the eggs sticking and they claimed I need to use more butter. Heart disease anyone? I used plenty and my old farberware omelet pan that I bought at a discount store had none of these issues! I have come to believe that calphalon is like a Rolex watch... pretty to look at but not practical for everyday use.

The people who are complaining about food sticking shouldn't mark down this set since eggs will stick to any stainless cookware set. That's what "NONSTICK" pans are for. For all other cooking these are great.

I had purchased this set after deciding on a Calphalon Tri-ply set. I had done alot of research on the Triply set but after seeing these in store, I wanted them. I love the brushed look plus they are the same triply performance. The handles on this set are twice as thick and much more comfortable. This set did come with less pieces for more money but since I plan on looking at them for along time. I'd rather spend the extra money and get what I wanted. Upon using my pans for the first time, I almost fell over after hand washing them. They had the horrible "rainbowing" effect so many have mentioned. I had preheated them, let the food rest on the counter 10 mins as suggested, Cooked the food at a med. heat, then let the pans cool down. After seeing what had happened I came online and read some reviews on here and thought "Oh No, What did I buy?". I then went to Calphalon's website and right in the FAQ section it addressed this rainbowing and said to use Barkeeper's Friend (which I didnt have) or lemon juice. So I went in a poured a bit of lemon juice in the pan and within no time all colors were gone and they looked as good as new. They have cooked wonderfully. Even heating, much faster than my older nonstick pans. I have been using these for some time now and I love them. They are great. I would recommend them to anyone who likes to cook and is looking for a beautiful, yet effective cookware set.

This set should include the 2 quart saucepan also. The pans are heavy duty, well balanced on the stove, but are akward to carry and pour out of. The 3 1/2 qt saucepan has only 1 very long handle and is very heavy to move from the stove. In my opinion it should have 2 rounded handles to grasp onto, as well as the 3 quart saute' pan having 2 rounded handles. If given the chance I would trade in these pans. Cooking is nice as it cooks evenly and food does not scorch. My only other complaint is when frying foods. Food particles scrape off easily, but there is an oily residue left that is very hard to clean off, even when using the cleaning suggestions that came with the pans.
