The Japanese version of the chef's knife, the santoku is useful for straight chopping, mincing, and slicing of larger quantities of vegetables and meat. Cooks with smaller hands may prefer this 7-inch blade as the shorter length offers better control while cutting. The width also provides a great platform for transporting chopped vegetables from cutting board to sauté pan.

Part of the Four Star series of cutlery, this santoku has a fully forged high-carbon stainless-steel blade. The blade, bolster, and tang are welded of one piece of metal using Henckels' Sinter Metal Component Technology, which distributes the right quantities of metal to each part of the knife. The result is a longer-lasting edge and a more consistent angle on the blade. The blade has also undergone Henckels' Friodur ice-hardening process, which further strengthens it and protects it from discoloration. The black polypropelene handles offer a secure and comfortable grip and are hygienically attached so there are no gaps between the handle and blade for food to become trapped. First introduced in 1976, the Four Star Series is one of the world's most popular knife lines. Four Star knives were designed and developed in close cooperation with renowned professional chefs. The result was a fully forged knife with a unique molded handle. In addition, Four Star knives use J.A. Henckels' Friodur ice hardening for corrosion resistance, a process that also contributes to cutting-edge retention.

Nice weight. Slicing is a breeze. I can't say I've owned a better knife. I can't wait until I get the rest of the set.

This is my first JA Henckels knife...it's incredibly sharp and I love the feel of it in my hand, the fit is great. One caution - be careful if you are used to knives that are not this sharp....I have a nice scar from my initial use! Definitely will add some other knives from this collection to my own.

A BARGAIN!!! Why is this blade so much cheaper than others when it is equal in quality and superior in grip? Buy this one and you won't be disappointed.
I've used this model and I sell a lot of these to other chefs and cooks...I love it, they love it...'nuf said.

It claims a 5 mojo*z in my bag!!!

Purchased this knife to complete my knife collection. I'm not a serious (or even a great) cook but I love Henckels Four Star knives and have used them for over 20 years. This knife (as well as the others in the Four Star Collection) is well balanced and very sharp. It makes me want to take cooking lessons so my meager skills can match the knife's potential. My efforts in the kitchen may not taste gourmet but I feel like a chef with this knife in my hand. Marian

This is a surprizingly great knife. More accurate slicer than the chief's knife, it is also great for dicing. You can hold the knife by it's spine and rock the knife over onions and peppers to get really nice small dice. I obtained a leap improvement to my Salsa's texture after using this knife to prepare it. Definately like this knife for veggie slicing and dicing a lot.
