Editorial Reviews:

Amazon.com Review
Designed for serious cooks, Cuisinart's MultiClad pots and pans heat quickly and uniformly thanks to an aluminum core bonded between layers of 18/10 stainless steel. The core runs not only across the bottoms but all the way up the sides to disperse heat evenly throughout food. The nonreactive interior layer is highly polished, so it's naturally stick-resistant as well as resistant to discoloration and corrosion. A polished band just below the pots' and pans' rims handsomely accents their brushed exteriors. Add a deep-set, tight-fitting, polished lid, a tapered rim for drip-free pouring, and polished handles riveted for strength and this classic, straight-sided, 5-1/2-quart sauté pan is ideal for sautéing, frying, or one-pan cooking a family-size meal. For braising, the pan is oven-safe to 500 degrees F. It measures 11-1/2 inches in diameter and 3-3/4 inches deep. Though it's dishwasher-safe, hand washing is recommended to maintain the pan's beauty throughout its lifetime warranty against defects. --Fred Brack

5 out of 5 stars Wonderful Cuisinart MultiClad; For Serious Cooks Only!   March 13, 2005
1 out of 1 found this review helpful

I have quite a few Cuisinart MultiClad pieces including this one. They have all performed extremely well during many different cooking tasks. The tri-clad design enables food to cook much more quickly and evenly, the stainless steel cleans easily, the pots and pans are well-constructed (which means they are heavy) and they're attractive. Another fantastic feature is the ability to go from cooktop to oven because of the all-metal design. MultiClad pieces are not something that I have recently purchased; rather, I have been using them for a number of years and still love them as much now as I did when I first bought them. You will not regret purchasing MultiClad anything!

5 out of 5 stars Functional and Quality   February 15, 2004

This is a great pan and one I find using a lot. When it arrived, I immediately put it to use in sauting lots of vegetables used in a stuffing mix for a Thanksgiving dinner. This pan has also been used to fry up bacon, chicken, poach eggs, chicken breasts, and salmon fillets. I have braised pot roast and pork chops without it becoming dry or worse, the pan drying out and burning. This pan has some heft to it and stays put on the burner without it bouncing or sliding around. It can take high and low heat without any hot spots to cause any problems. The long handle, helper handle are both sturdy and the lid fits tight. Clean up is a breeze. If food has stuck or burned on, a short soak of hot soapy water with a nylon scraper cleans it up beautifully. Although it is dishwasher safe, I have never put it into the dishwasher prefering to wash it by hand. On ocassion I use a little rub of Bar Keepers Friend to keep it looking in brand new condition. I am more than well pleased on the size, quality and workmanship of this pan. I find this pan comparable to the All Clad line when I was looking for new cookware to replace my old set, but at a much better and at a much more affordable price. It is a great pan and I highly recommend it to anyone who is looking for high quality professional type equipment.

5 out of 5 stars Beautiful finish, great performance   August 28, 2003

This is a great pan. It seems to be built to a higher standard than All Clad, and has a higher polish (both inside and out). My later pans are copper clad tri ply (Cuisinart makes the best by far), but this pan looks and performs so well that I can't bring myself to replace it. It is a work of art. Period. If you prefer the stainless exterior for asthetic reasons, this is the best 5.5 Qt Saute pan that you can buy.

It heats evenly, works with all utensils, cleans up in minutes, and shouts "quality" from every angle. It also takes high heat in stride, and doesn't suffer from hot spots. As the instructions say, you can usually use less heat for the same cooking effect, but if you need to turn it up for a particular dish, the pot will perform. It also works great in the oven (at any heat). Anyone who had a bad time cooking with this pan probably had a bad day in the first place.

1 out of 5 stars Disappointed   July 5, 2003

I purchased this pan and waited anxiously for it to arrive. I now regret it. I burn things in the pan everytime I use it. I find it to be a difficult pan to use and difficult to clean up. The instructions say never to use it on high heat, so I don't. But even on medium and low heat, the pan performs poorly. I have since bought an 8 quart saute pan from Calphalon and have never had a problem with it. This Cuisinart pan was more expensive and is a very disappointing product.

5 out of 5 stars A GREAT PAN FOR SAUTEING FOR THE FAMILY   December 17, 2002

I got this pan 6 weeks ago and I love it. It browns very nicely and can cook more food in less time due to it's good size. It cleans up easily , as well. I only wish I waited to a few weeks to buy it [since it's now less expensive]... What a buy!
