One of the newest premium lines from Zwilling J.A. Henckels, Twin Cuisine was introduced in 2004 with a major revelation: it's the first high-quality forged cutlery line to feature a molded handle with a visible, full-length tang that runs horizontally. In fact, the handle is absolutely stunning, with the shiny tang curving slightly as it courses through the black nonslip polypropylene. The Henckels Twin Cuisine series stands among the finest cutlery on the market. The grips are well contoured and rest comfortably in the hand. The blades are razor sharp and thanks to a special process of ice-hardening, should remain so for quite some time. For heavy users, the set includes a sharpening steel that should help retain the edges almost indefinitely.

This set is comprehensive as it offers the following:
3" Kudamono Hollow Edge Parer
4" Paring/Utility Knife
5" Serrated Utility Knife
6" Utility/Sandwich Knife
7" Hollow-Edge Santoku
8" Chef's Knife
Twin-L Kitchen Shears
9" Sharpening Steel

The J.A. Henckels Twin Cuisine 11-Piece Block Set is almost identical but adds a J.A. Henckels Twin Cuisine 2-3/4-Inch Parer/Boner as well as a J.A. Henckels Twin Cuisine 8-Inch Bread Knife. If you believe you would have a use for those knives, you might want to consider buying up. Aside from that, this is a reasonably comprehensive set. Before buying, however, you should consider whether this set makes financial sense for your particular needs. The bundled price of these items is roughly of the 7" Santoku or two of the small knives. So if you don't intend to use some of the knives in the set, it might benefit you to build your own by buying the pieces separately.

There are many knives available for a lot less money than the Twin Cuisine series. Unfortunately, cheap knives will never take and hold an edge like this one will. Try them once and you'll be hooked on Twin Cuisine for good. But look closely at your buying options and whether or not this set is the best way to buy into the series. In my particular case, I would drop the 3" Kudamono and the 7" Santoku, but badly wanted the Bread Knife and the J.A. Henckels Twin Cuisine 7-Inch Fillet Knife so it made sense to do it myself. Your own answer may differ, but I would strongly recommend going through the process of thinking about it in advance. It's a significant investment and worth spending the time to make certain you get the most for your money.

To purchase a set of Henckel knives is an investment. We have had ours for 2 years, I would never have thought that a knife set could make such a difference in the kitchen but they do. The decision of which Henckel was a challenge; however, we are very happy with this set and feel it was worth the price.

In deciding between Henckels Pro-S, Henckels Twin Cuisine or Wusthoff for my purchase, I went with the Twin Cuising based on the look. The knives have an elegant look, and still feel great in your hand. The grip may be too big for some people though. In hindsight I probably should have gone with the Pro-S due to the balance and feel of the blade. The back end of the Twin Cuisine is quite heavy and makes chopping and dicing a bit slower. I don't regret the purchase though, because these are very high quality knives that cut through anything quickly and efforlessly. Just be careful to watch where you fingers are while cutting. I felt no difference when the blade switched from cutting through a green pepper, to cutting through my thumb. Just for reference, this set contains:
8" Chef's Knife
7" Hollow Edge Santoku
6" Utility/Sandwich Knife
5" Serrated (tomatoe) knife
4" Paring knife
3" Kudamono Vegetable Knife (I've never used this one)

I find that I have more control over the chef's knife, but that the santoku is easier to cut with. I just switch back and forth each day. I would have gladly traded the 3" vegetable knife for an 8" bread knife, or 5.5" boning knife, but the set works fine and cuts brilliantly. My suggestion would be to go to bed bath or linnens and things to hold each blade (Twin Cuising, Pro-S, and Wusthoff) and choose what fits your hand best, you won't be dissappointed with either choice though.

We purchased this set of knives about two months ago and we are extremely satisfied with it. We compared this set with the pro series and some Wusthof's and picked these based on the feel and the price.

The balance of these knives are perfect and the handle is very sturdy. The addition of the santoku knife is great and works very well.

Overall, I am extremely satisfied.
