By dividing this cornbread skillet into eight wedge-shaped sections, Lodge exploits cast iron's baking advantages to ensure that a tasty crust envelops each wedge when it emerges from the oven. Because cast iron is unmatched for heat retention and distribution--no hot spots--that crust will be crisp and uniform. The skillet is 9 inches in diameter, and each wedge is 3-1/2 inches long and 1 inch deep. The skillet weighs 5-1/2 pounds, must be seasoned by coating with melted shortening and then baked, and needs to be coated with oil or cooking spray after each use to prevent rust.

This skillet's weight and care requirements put off some cooks, but, as has been known since the Middle Ages, cast iron permits precise baking and flavor- retentive cooking, has a natural nonstick finish when seasoned, and lasts for generations (thereby increasing its value). I use these cornbread pans for lead ingot moulds. They work
very well as long as you let the temperature drop below 300F
before expecting the ingots to drop out. Much better than
muffin tins.

Do not bang to get ingots out! Cast iron shatters!

Great to have crust all around on your cornbread slice!!!
You have to spray the pan really, really well with cooking
spray then heat it before you put the batter in to allow the
cornbread to come out in one piece. I run a little spatula
around the edges before I dump the pan. Gave one as a gift
at Christmas and it was a hit!!!!
