Editorial Reviews:

Amazon.com Review
Gone are the days of clattering baking pans when the household baker is at work. This professional-level silicone bakeware is quiet and so flexible that it folds up for storage in tight spaces. Made of FDA-approved food-grade silicone, the 9- by 13-inch rectangular cake pan is oven-safe to 428 degrees F and provides even heat distribution so your peach cobbler comes out bubbly and delicious. The pan is nonporous and won't retain the odors or flavors of your food after cooking. The bakeware also has a high-gloss nonstick finish on its interior for easier removal of your baked goods and faster cleanup. And, if that's not enough, the cake mold cools down faster than traditional bakeware and is also microwave-, freezer- (down to 58 degrees F), and dishwasher-safe. SilconeZone's revolutionary bakeware is covered by a limited lifetime warranty. --Cristina Vaamonde

5 out of 5 stars Excellent for its intended purpose   April 14, 2008
This was the largest silicone pan I could find. Its quality is very good, certainly equal to silicone bakeware commonly found at big box retailers.

A couple of notes about this type of bakeware, not necessarily confined to this specific item:

Silicone bakeware is really not a replacement for traditional glass, ceramic, or metal bakeware. It's flexibility and non-stickiness make it ideal and unbeatable for some specific uses - such as hard breads, cakes, protein bars, etc. that are difficult to remove from traditional pans. The silicone pan can literally be peeled off, and for that purpose there's just nothing else like it.

For other tasks, like casseroles or other things that will be scooped out, silicone isn't so good. It is easily punctured with a sharp knife or fork, and the flexibility that makes it so great for some things is a nuisance for others.

The moral of the story is this - don't expect a silicone pan to replace a traditional pan. But for some specific baking tasks, nothing else can compare to it.

I love this so easy to clean and works great. will never go back to reg metal pans as this is so easy to use and the pan cools alot quicker. Great feature when my 5 year old wants to help in the kitchen and likes to touch things.

5 out of 5 stars Great for... cooking food, too!   February 7, 2007

I went for this large cake pan since it's the largest I could find. This pan can hold 2 medium sized porgy, snapper or sea bass, about 4lbs worth of fish. It's easy to season the fish with salt, garlic, olive oil, etc. in this pan, and then it can go right in the oven at 400 or even 450F. Then there's plenty of space left to put in vegetables 10-15 minutes before the fish is done. (BTW the fish takes about 30 min at 425F. I found that slightly higher temperature is needed to cook fish in the same time in this pan, compared to parchment paper. Smaller fish cook a little faster, so I use more like 400F.)

It is a bit floppy for this application, but it still works well. Unlike metal or glass pan, this thing is really easy to clean since things don't stick to it. It also doesn't absorb smell no matter how much garlic, shallots, tomatoes and a lot of other things are cooked in it, with lots of oil. Compared to parchment paper (like in pesce al cartoccio), this thing can concentrate the flavor better because it's easy to cook covered initially and uncover the later half of the cooking, but the results are otherwise very similar. It also doesn't use up a lot of parchment paper.

To be frank I bought this product primarily to replace parchment paper when I cook fish, shellfish and vegetables. Despite lots of oil, salt, etc. and 400-450F cooking temp., this product worked very well. (at one occasion I used it to test whether it can roast coffee beans at 500F, but again, the pan was fine.) I'm not sure what bakers can get out of my review, but (1) the pan is really fine at 500F, (2) things can be cooked well without sticking, (3) you can have one more use of this pan.

4 out of 5 stars Floppy, but otherwise good quality   September 29, 2005

This pan is nicely made, and is fairly thick silicone - but when full, it is floppy and doesn't hold its shape on the sides. The cake I made turned out with bulges on the sides that I had to trim off to make it a nice, neat rectangle. I understand now why some more expensive silicone pans have wire "sleds" to support the pans.
