The savory pine-mint flavor of Rosemary complements lamb, chicken, and pork. Grayish-green needle-like leaves. Pale blue flowers. Perrenial, can grow to 6 feet tall, but more commonly grows to 3-4 feet tall. Length of Growing Season:Grown as an annual in the North, Rosemary is appropriate for short and long season gardeners. Germination can be very slow. Short season growers should purchase plants instead of starting from seed or should grow Rosemary indoors in containers. Temperature: Frost and light freeze hardy. Wind: Good wind resistance. Popular for growing by the windy seaside.Light:Prefers full shade. Soil: pH:6.0-7.5. Prefers a light, well-drained soil. Moisture: Rosemary does best in dry soil, with occasional waterings. Container Gardening: Rosemary can be grown in containers for indoors or outdoors.Garden Design: Rosemary can grow into a very large bush. It looks beautiful in rock and herb gardens. Do not space to closely as Rosemary needs good ventilation. Harvesting: Stems, leaves, and flowers can be picked at any time. To dry, harvest stems and leaves just before bloom. Dry flat on a screen in a dark, cool area with good ventilation. Store in an airtight container. Can also be frozen.
