1 out of 5 stars Tr-Ply Rusted after one use?!?!...RUST?!??...unbelievable.   July 17, 2008
This has to be the strangest review you'll ever read regarding a tri-ply stainless steel pan, but yes, after using this pan ONE TIME, it started to rust.
I purchased the pan here, from Amazon, received it 2 days ago. Used it the first night and had some chicken fond stuck to the bottom of it. I put about a 1/2" of water in it to soak overnight. The next morning I noticed a very slight brown coloration in one of the rings on the interior wall of the pan. I thought it was just a scrape from a utensil, but in the back of my mind, it seemed like rust starting, which should be impossible for this pan. This pan is built with stainless steel surrounding aluminum, both of which, do not rust.
So, to be sure, I cleaned the pan completely, and put 3/4" of tap water in it to see what would happen, and left it overnight.
Well, the next day I awoke to a 6" rust line around the inside of the pan, and it looks like if I left it longer, it would have encompassed the whole inner diameter.
So, after thinking I was losing my mind, I called Calphalon. They said they've never heard of such a thing and they wanted it sent to them to run tests. I'm sending it to them as we speak and am VERY curious what the outcome might be.

My advice is if you've bought one of these tri-ply pans recently, do a water test overnight and see the outcome.
These should never rust, for any reason, it should be physically impossible.
These are manufactured in China. Obviously my pan is not made of what it says it is, or it would not rust. What I want to know is what ARE they made of? And is it even safe to cook with?
This is very troubling.

5 out of 5 stars 10" Omelet Pan   May 31, 2008
I love all my Calphalon Triply Stainless Steel pans, including the 10" omelet pan. It is a nice medium-sized pan, great for poaching eggs, grilling a sandwich, small fry jobs for 1 or 2 people. Like all the Triply Stainless Steel cookware, it heats quickly and cleans up easily. I highly recommend this size for a small family.

5 out of 5 stars Best Frying Pan I've Ever Owned   May 1, 2008
It's a great pan. I use it every day to fry up egg whites for The Beloved and I. Just a little canola spray and it acts like it's non-stick. Barkeeper's Friend keeps it nice and shiny--sometimes I have to give it a little soak for stubborn gunk, but really, it's very easy to maintain. Just like any pan, you have to scrub a little more to get the brown off the riveted area. I'll never go back to teflon. Heats up quickly and evenly. Also does a great job with burgers. The Calphalon 3-quart saute pan lid doubles as a cover for this pan.

2 out of 5 stars Sticks and hard to clean   April 24, 2008

I have pots in the Calphalon Triply Stainless Steel and love them. I order the omelet pan thinking it would be the same. Even with using olive oil, butter or spray, everything sticks. On top of that, it's also difficult to get clean. After three soakings, there was still a small amount of scrambled egg residue which shouldn't be that hard to get off. I think in the future, I will continue to buy the Caphalon non stick pans even though I prefer the stainless steel for my pots.

5 out of 5 stars Excellent quality; use this pan all the time!   March 29, 2008

I love this pan! The size is great, the quality is excellent. The key to using stainless steel is make sure pan is heated to medium BEFORE adding oil. When making fried eggs, I heat pan (make sure not too hot), spray with Pam, fry the eggs, and clean up is quick and easy. Sometimes might let the pan soak a few minutes in the soapy water, and might have to use a scouring pad lightly, but no big deal. Was having to do that with my Teflon pans at one point. And now I can be assured we're not consuming or breathing any toxic stuff that Teflon is suspected of emitting (anything that will kill caged birds if you overheat the skillet is not for me). I look forward to adding more and more to my collection. I also have the 12" everyday pan that I also use all the time!
