Product Description

This information-packed volume opens with a brief history of this centuries-old technique and a look at the many ways slow cooking and braising transforms the texture of food as well as enhances the natural flavors. Comprehensive descriptions cover the types of slow cooking and explain every stage of the process, from preparing the food in order to achieve the best results to properly testing the food for optimum doneness, providing readers with all the knowledge they need to turn out delicious and memorable meals. Slow cookers, Dutch ovens, roasting pans, and other important equipment are clearly described and pictured.

Five chapters filled with more than 130 recipes follow, offering a range of irresistible ideas for preparing and braising fish and shellfish, poultry, meats, and vegetables, both using a traditional stovetop or oven method, as well as a slow cooker. The chapters begin with invaluable advice on buying and preparing fresh foods, and the recipes, each one handsomely photographed, perfectly balance everyday fare, such as braised Brussels sprouts with pancetta, chicken marsala, with special-occasion dishes, including veal stew with asparagus, and Italian braised short ribs.

Detailed instructions and step-by-step photographs explain the basic techniques of slow cooking and braising such as browning ingredients, carving large cuts of meat, and preparing delicious side dishes. A glossary of culinary terms and ingredients completes this indispensable volume.

I bought this book and was just ordering another as a Christmas Gift! I do end up buying Williams-Sonoma cookbooks regularly, I find the photos beautiful (and therefore helpful) and the recipes great and easy to follow. I have made two dinners from this book already and can't wait to try a third. Give it to all your busy Mom friends, its a must.

My boyfriend and I have been making our way through the recipes in Slow Cooking. I'm not a big foodie, but this book has made it so fun, easy, and romantic to cook together. The photos are so sensual and the style leaves lots of time for getting to know each other. Wow, and it's not even winter yet!

I am a full time mom going back to work after nine years. I knew that I was going to have to learn to love my slow cooker if I ever decided to feed my family a home cooked meal again! I have been a fan of Williams Sonoma books for a long time but I wanted to check out all the offerings before I picked out my new slow cooking bible. Having scoured Amazon and local book shops I feel confident saying this book is the most comprehensive with the best sounding recipes. A lot of the slow cooking cook books pander to the "lowest common denominator" cook and the ingredients aren't that healthy. This one has recipes that seem much fresher and better tasting which is a good thing if you plan on using your slow cooker as much as I do! Plus, the photos and layout are gorgeous.

5 out of 5 stars An Instant Classic for the Slow Foods Kitchen   October 29, 2008

Encompassing recipes both down-home and exotic, and ranging from vegetarian to veal, Essentials of Slow Cooking is a great example of why I love Williams-Sonoma cookbooks. It's informative, inspiring, and just plain mouth-watering.

Drawing from dozens of cultures and countries, individual recipes are detailed but not daunting, and are complimented by a collection of classic side dish recipes and slow-cooked menu suggestions.

The photos throughout are gorgeous; I'm a visual person and appreciate that almost every recipe is accompanied by a full-page enticement to get into the kitchen and start cooking! My slow cooker will surely go where it's never gone before.

1 out of 5 stars Williams-Sonoma Should Be Ashamed   October 14, 2008

I am an avid reader of cookbooks and other novels and NEVER before have I seen so many typos in a so-called professionally-published book - and I'm only to page 30. WHEW! When flipping through, I immediately found one in a recipe - just a sloppy error (something like "the nheat," rather than "then heat"). I've only read to page 30, but so far have run across:

"Simple, rustic dishes, such as the Spanish influenced Albondigas, has such bold flavors ..." (p. 19 - should be have rather than has),

"... while Mexican pork Carnitas (page xx) take 10 hours on the low-heat setting ..." (p. 20 - forgot to replace the xx with the page reference),

"Many slow-cooked dishes such as are ready to serve just as they are." (p. 22 - such as what?).

I'm sure there are plenty more - that's three pretty glaring errors within four pages. The recipes look fantastic, but I wonder how many typos they contain?! Williams-Sonoma should be ashamed for offering such shoddy workmanship and for a retail price of $34.95! If it weren't such a hassle and if I hadn't bought the book with points rather than dollars, I would return this on principle.
