Don't let some of these negative reviews get you down .. these are GREAT knives!

Prior to purchasing these knives I read the various reviews .. I find Amazon Reviews very helpful! My daughter in law has the Wusthof but I wasn't sure I was willing to pay quite that price since I don't cook as much as she does with her larger family. The Consumer Report information on the Profession S being "Forged because it is very close in form and function to traditionally 'Forged' pieces .. the only difference is that it isn't physically 'forged' from one piece of metal." .. helped my decision also. I then purchased the Henckels and have been just delighted!

Right out of the box they were gorgeous! Not a single defect/flaw/scratch .. each one wonderfully sharp .. I tried each knife .. slicing a piece of paper using from tip to handle .. like slicing through butter!

Quite frankly I would never abuse a fine piece of china nor a good knife .. so I don't worry about warping or discoloration of the handle .. it has always been my practice to just quickly scrub and dry my knife after use .. even my old cheaper knives still look good after years of use .. I'm so happy to finally have some GOOD knives .. trust me .. I'll take REALLY good care of these knives! Have some pride folks! (And if in time they DO get a bit banged up .. mores the benefit to my family .. it created some good food in the banging up!)

I also found the Customer Service Department more than helpful when I called because I wasn't quite sure about one area of registering my product online .. they couldn't have been nicer or more helpful.

I do not have huge hands and these fit my hands really nicely .. AND my husband is BIG .. and he likes them also!

I recently bought a Henckels Professional "S" 9-Piece Block set, and I must say that it looks and feels like the real deal.

My brother is a French Chef, and he preaches the importance of good knives. So when I decided it was time to get a real set of knives, I bought the best that I could afford.

It is right that these knives might not look as good as some cheaper knives, but here the money are not spend on the visual appearance, but the on the actual quality of the blade.

The balance on the knives are near perfect, and they just feel so nice in the hand.

When the knives comes out of the package they are only moderately sharp. So the first thing I did was to sharpen them, and yes they can hold an edge. I use a Spyderco Triangle Sharpmaker 204MF, and after 5-10 minutes with each knife it was upgraded from a utility edge to pretty close to a razor edge, and they can hold that edge.

I must admit that I love these knives, and it is a pleasure to work with them.

Honestly you would think many of the "reviewers" here were submitting their knives for a beauty pageant and not using them to cook with if you read some of the opinions voiced here. However I feel another poster was on the mark when they mentioned that many probably buy their high price German knives as more of a status symbol/showoff item than as a true tool or utility item, I wouldn't be surprised if many of those commenting on scratches on the handle order out five to six times a week and the knives at most get used to slice a lemon for their gin and tonic.

With that aside onto the product at hand, my wife and I were given a set of both Professional S (I believe six piece set) and large set of Henckels Ever-edge for our wedding, we owned a smaller set of Ever-edge but put a larger set on our registry because we wanted something nicer and more versatile. We took both the Six piece Pro S and the Nine piece Ever-edge back and exchanged it for the nice piece Professional S set (I happened to be working at a store which sold high end cutlery -Wusthof, Global, Henckels, etc... and happened to get a good discount on it). I also picked up six matching professional S steak knives to accompany the set.

As I said above I worked in a store for a short amount of time which also sold other high quality brands such as Wusthof and Global however I chose the Henckels as at the time the price was the best of the bunch, the knives felt much better in my hands than either the Global or the Wusthof, and I greatly preferred the straighter edge of the Henckels over the "belly" of the Wusthof. Really it comes down to personal preference though as what feels good to me might feel awful to you. Also Wusthof and others are only sold either on net discounters or higher end cooking stores which is great if you like to hunt around however Henckles and their Professional S line are sold in a good deal of retailers, which to me means that ordering replacements or buying additional pieces will be that much easier and I will have a good deal more room to work in terms of price negotiation. So if you are a knife snob and need to buy your knives at the high end knife/cooking shop only and or will get annoyed seeing your knives for sale in Bed Bath and Beyond then you might not want to consider the Pro S line.

Someone below mentioned "Forged" vs. "SCT" and from what I have learned/read on the subject the differences are so minor that the end user will never notice the difference. Basically it boils down to the blade either being forged from one piece of metal (older method) or on larger blades forming them from a composite, or forging two pieces or more of metal together to make one blade. Consumer reports and cooking.com refer to the Professional S style as "Forged" because it is very close in form and function to traditionally "Forged" pieces the only difference is that it isn't physically "forged" from one piece of metal. The other option is "Stamped" such as cheaper knives and Cutco.

Overall I am more than pleased with these knives and wouldn't hesitate to buy them again. My wife loves them and they perform very well. While the finish might not have been pristine out of the box (Yes I noticed some scratches as well on the handles) one has to remember they are only knives and they are meant to be abused, when selling other brands I noticed the quality was no better or worse (Wusthof and Global had their share of flaws in finishing as well) so your mileage may vary. As others said, check these out in the store before you buy and compare to others, if you like a nice straight blade with a sure feel and a slightly smaller handle (good for smaller hands) then the Henckels might be for you.

I purchased my Pro-S set roughly two years ago and have used them on an almost daily basis since.

The blades are of very good quality. Sharpness along the cutting edge was nearly even from base to tip when new. With weekly honing with the "sharpening" steel, the longer 8' blades have remained very sharp. Only the paring knife has lost its sharpness and needed a professional sharpening. The backs of the blades were properly deburred and dulled, allowing for tremendous pressure to be applied without injury to self (chopping turkey bones in half with the Chef knife). The serrated utility knives continue to cut loaves of bread as if they were butter.

My largest complaint has been with the handles. They are a sandwich of steel between dense black plastic. When run though a dishwasher (even without heated drying) or left overnight in soapy dish water, light rust sometimes occurs in the tiny gap between these two materials. It is very superficial and can be quickly cleaned, but it is annoying. The plastic is also starting to see light spidercracks on the paring knife.

Furthermore, the rivets have pitted and tarnished. I can no longer soak my knives before washing them, and the dishwasher is completely out of the question for fear of further damage.

Lastly, the wood block has not warped or discolored even after two years of moisture and direct evening sunlight. The top four slots on the right side all handle 8" blades. The topmost slot could even handle a 12" blade if required.
