Up until now All-Clad's excellent heat conductivity has been a result of an aluminum core. Another metal equally efficient when it comes to conducting heat is copper. All-Clad now has a complete line of copper core stainless steel cookware which uses bonded 5-ply construction to achieve culinary perfection. The copper core is exposed in an attractive band around each piece, adding warmth, color, and authenticity. Unlike pans with an abundance of exposed copper, these pieces clean easily and are lined with durable food-safe stainless steel. The mid-sized saute is perfect for couples and small families as it can saute shrimp and veggies, brown hamburg for a skillet dinner and so on. The lid allows you to simmer and poach upon request.

Just got this pan and LOVE it. Don't know what the reviewer was talking about when saying this warped. NO WAY. I've owned All Clad Copper Core for years and absolutely love all of them. I like the design on this new pan. The copper stripe is larger making the pan more beautiful and it now has magnatized exterior for use on new cooktops. None of my older pans have that. Expensive but great product!

I used "the pan" this evening again. This pan is just OK. Really expensive and just OK. I have a ceramic cooktop- this pan warps when the element gets hot creating hot spots - the copper core makes this situation not so bad but the fact remains that the pan is thin based. In the same size range, I prefer my Kirkland Signature (made in Italy, probably by Tramontina - their new stuff from Thailand looks iffy), I prefer my Tramontina and I prefer my Calphalon both the hard anodized (I dislike non-stick) and especially the Calphalon Tri-ply Copper. Calphalon Tri-ply Copper is less expensive and better performance than the all-clad.

I think I'm a little crazy for buying this. I just had to find out if the copper-core was really better than an aluminum one. It is, but not by that much. You can buy a pan from Cuisinart's Multiclad series that will do the same thing almost as well for a much cheaper price.

That being said, this thing is very well designed. The rolled-lip is useful for pouring. The radius of curvature where the bottom meets the sides is large enough to allow for utensils to easily get in there (a problem with most pans). The handle stays cool and is well designed. Overall, this is the best 2-quart saute pan money can buy. Is it worth it? That's up to you.
