This exciting hybrid combines qualities of both traditional metal and non-stick cooking surfaces. Now not only can you brown, sear, and reduce sauces as the recipe intended, but you can also breathe a sigh of relief as you won't have a battle removing food and stains from the pan following use. How did this happen you ask? CALPHALON ONE INFUSED ANODIZED is manufactured with a revolutionary anodization process. Both interior and exterior surfaces are infused with an advanced release polymer which actually penetrates below the surface of the metal, into its very pores, offering superb durability and versatility. The intrinsic properties of aluminum ensure fast and even heating, as you've come to expect from Calphalon. Brown and saute with the lid off, or simmer with it on. This very useful piece might be used for cooking meats, seafood, or vegetables. The curved sides facilitate stirring and tossing and the helper handle makes transport easier.

How can it be that I'm the first to be reviewing this pan?! Maybe cause it costs so much? It's completely worth it though. I bought mine 3 or 4 years ago and it hasn't let me down once, even after some abuse from me and my family. I bought it because I felt like I couldn't stir large portions of food in pans without the food spilling out onto the stovetop so I thought I'd invest in a much larger pan plus I liked the idea of one-dish meals. There were so many bonuses though:
- Pan looks and acts like nonstick but it's not (it's better -- it's hard-anodized so it can take a lot more abuse and also won't poison the air if it gets left on the burner accidentally).
- Food doesn't stick to the bottom of the pan more than nonsticks (although I admit I usually use a little oil or butter) and the clean-up is so so so easy. A scouring pad isn't usually necessary but what's so great is that it (a REAL, abrasive pad) can be used on this pan without damaging it, in case it's needed. Old food comes off instantly in most cases though, without the scouring pad. You can use Barkeeper's Friend cleaning powder to get the pan looking new again and I swear, after all its uses this pan STILL looks brand new because of this!
- You can use metal utensils in the pan as long as they're not sharp.
- This pan is the mothership of pans. It's gigantic but still manages to fit on the stove and even leave room for other cooking (barely!).
- The shape is great cause it's so universal...I've used it like a regular pan or skillet or wok or even sauce pan in some instances cause the sides are deep!
- It's very sturdy and the handles are on there really well and not coming off ever. And yet somehow the pan manages to be relatively light. But for those who might be suffering from arthritis, you can use both handles (which you should definitely do if it's full of food)! The handles feel really good in the hand too and stay cool.
- The lid is fantastic. I love how it lays flat on top (in a quiet sort of way) and the handle on top is much nicer than a silly little nob.
- Pan can go in the oven for baking as well as under the broiler.
- It impresses EVERYONE and looks AWESOME hanging from my pot rack in the center of my kitchen above the island. This pan makes me feel like a real chef!
- Most importantly, it cooks the food beautifully.
