The chef's knife is an all-purpose knife used for slicing, chopping, dicing, mincing, and many other functions.
A santoku knife is often called an Asian chef's knife. They have a straighter edge than a chef's knife, and a more rounded spine, particularly near the point.
A utility knife is a medium size knife that can be used for a myriad of tasks.
A paring knife has a plain edge blade that is ideal for peeling and other small or intricate work.

Never place the knife in the dishwasher. Hand wash and dry after every use.
Regularly sharpen the knife using the original Type 301 whetstone. Under no circumstances should a sharpening steel be used, as it will damage the blade.
Store the knife in a safe, secure manner, for example, in a knife block so the blade is not left exposed.
Only use wooden or plastic cutting boards, never marble or glass when cutting with a Type 301.
Only use the knife to prepare food. Do not use it to cut frozen foods, bones, or as a utility knife.

I bought this set last Christmas on eBay for a lot, lot less. All the knives and the block are made in China. I was leery at first, but to my surprise the knives have held their edge after much abuse. Razor sharp!

The handle is well balanced and comfortable to hold. I don't know the exact detail of this alloy (301 steel, and 18/10 stainless) versus other brands. Under careful inspection, you can faintly see where the handle is fused to the blade. Thus I know the knife is not machined from one solid block of metal. So their claim is true?! The blade is brittle so try not to bang the blade against a harder material. Over all, I am very satisfied with the set (for what I paid for).

The only "Porsche" I may ever be able to afford in my life...

If you want pure/extreme quality but don't care much about design, get the Global.

These knifes have an awesome design, are light and well balanced. They are so sharp that cutting is really efortless.

The set also includes pretty much all the basic knives that are needed in a kitchen (except perhaps a bread knife that can be purchased separately).

Highly recomended.
