great pan for searing, saute'ing, stir frying... all of your basic everyday tasks.
not so good for panfrying anything with a breading.
would recommend.

I don't get why everyone is complaining about this pan. I love it! I cooked pork chops in it; they didn't stick at all and were VERY tender. The trick is to preheat the pan on lower heat than you would use for nonstick, then add your oil/butter and let it heat up, then add the food (and be sure to let the food come to room temp before you add it). I cooked tilapia fillets in the pan a little while ago. My second batch stuck just a little, but they were also falling apart, so I think I cooked them just a bit too long. The first batch and last batch didn't stick at all. For those complaining about the cleanup: I had spices that had stuck in the pan and a little bit of fish (from the second batch). Really hot water, a Scotch-brite pad, and a little Ajax got it spic-and-span clean with only a small amount of effort. You have to get it superclean, as food residue will cause the next batch of whatever you cook to stick. While it takes slightly more effort than cleaning my nonstick pan, it cooks so much better that it's worth it. The best part was the price. I want to replace my old pans with Calphalon, but I can't afford the full retail on the Calphalon One line. This pan was a good place to start...less than $30 with free shipping. I am very pleased with this purchase. You do have to be willing to make some changes in your way of cooking in order to be pleased with this pan, though, so if you're not willing to do that, don't buy it.

This is a great pan for braising, frying, oven roasting, just about anything. I braise ribs and finish them off in the oven in it.
