5 out of 5 stars MY GOD I LOVE THIS MACHINE!!!   August 24, 2008
I just bought the Zojirushi BBCCX20 and I love it! After hearing about breadmaker disasters I just made bread by hand. I love bread i hate mess. After reading reviews I bought a Zo and i can't believe how great the bread turns out.
I love the fact that it achieves consistant results. The bread slips right out of the pan. a friend warned me how her breadmaker baked in the paddles more than once ruining the loaf.
The recipes that come with it are good enough on there own and are easy to adapt to my own taste. It is quiet. I do not agree with the reviewer who complained about a 15 second beep. This is rediculous! i've heard breadmakers sound like washing machines throughout the needing cycles this would be far more annoying to me. THE BEST things about a breadmaker is virtually no mess, one pan and a couple of measuring cups! no flour all over my counters! No problems with rising dough in a cool house!
The machine preheats the liquid to the optimal temperature needed to help the yeast. Also my hands never touch the dough! I do think that the light setting is dark enough for most breads. All I can say is my beloved Kitchen Mixer has lost it's place on my countertop.

The Zoj X20 was very disappointing. Bread receipes we have been using for years on a previous Zoj model and on a Breadman failed to bake. They were small, hard, and caved-in in the middle. The two paddles look good in theory but just don't do the job. There are also no provisions for baking 1.5lb loaves. We returned the product - bought a Breadman, at half the price, and are just delighted with it.

My wife, the foodie who has whelped two (count 'em 2) fine chefs, and who used to stick her fine-food nose in the air, really loves this bread machine. It isn't perfect, but then what or who is? But considering that your average 8-year-old could whip up decent bread the second time (it does take a slight learning curve), it sure does a creditable job with almost no effort. If you want specialty bread, stay with your two, mark-one hands. But if you want to put in almost no time for decent, ingredient-controlled bread, get this Zoji bread maker.

P.S. Just remember to grease the paddles so you can get the bread out of the pan.

5 out of 5 stars Quiet route to beautiful bread   August 15, 2008
This is my third bread machine and the best yet. When my 8 year old Breadman started acting up, I decided to go for the gold.

So far I've made three loaves, one from the included recipe book and two of my old favorites (2 whites and a whole wheat). Each one has come out perfectly. One was timed overnight, another for a shorter period and the third started immediately.

Pluses:
- horizontal pan makes for nicely shaped loaves
- double paddles do indeed mix ingredients better (fewer leftovers on the edges)
- Quiet. Seriously, last time I didn't even notice when it started kneading. When we want it to start in the middle of the night, we will put it in a room with a closed door, though. (By comparison, we had to leave the Breadman in the hall outside our apartment to run at night, or it would wake us all up.)
- Size/shape. In our kitchen it sits on the counter tucked under the cabinets. The geometry of the pan and lid mean that we can open and close it without taking it out from under the cabinets. That means that even though it's a normal bread machine size, it effectively takes up less room.

minuses:
- Not set up for smaller loaves. There are a couple recipes for 1.5 lb loaves in the included book - I haven't tried them yet. You could probably do a custom program for one as well. I plan to freeze or give away one third of most loaves I make.

unknowns:
- Durability.
- Other uses. I haven't used any of the many many other settings, like quick bread (cake), jam, etc.
