4 out of 5 stars Brought some old dull knives back to life   January 23, 2008
7 out of 7 found this review helpful

I have some Flint Vanadium knives (almost 40 years old) and some Henckels Gourmet knives (20 years old) that were just not sharp enough anymore. Using a steel on a knife can only do so much for the knife - a steel is really not a true sharpening tool. After considering how much it would cost to replace those knives, I decided to give this little tool a try. It works! Are the knives razor sharp? No. I really don't care to have knives that are sharp enough to do an appendectomy, however. I like having intact fingertips and such.

I started out with one of the duller knives. It took waaaay more than five pulls through the sharpener, but I was indeed able to achieve an edge sharp enough to cut paper, just like it says in the directions. I am impressed!

I can't imagine how someone could chew up the edges of their knives with this sharpener, unless there was something wrong with the knives to begin with. It's not for serrated blades, so don't even try it.

Highly recommended.

5 out of 5 stars THE SHARPER THE BETTER   January 18, 2008

Bought this for my 22 year old grandson who just recently got into gormet cooking. He loved the design and the ease in sharpening.

Small and compact. Just leave on the counter and right before you start to prepare food, give the knife a couple quick pulls on the fine wedge and it is just amazing how sharp, so fast. The sound and feel is a little "scratchy", but the result is perfect. I am using mostly pro Henckels knives to begin with, but I have had no problem bringing some old cheaper knives back to a perfect edge with this sharpener. I gave up my trusty old crock sticks.

this is ok for the sharpening challenged. its output is far less acceptable than work with stone and steel on a good knife. however, better than nothing at all. as an alternative, and cheaper, if you don't know how to care for a good knife, take it to your local butcher once a month.

Was excited to buy this item as I had lots of dull knives made by several manufacturers (Chicago Cutlery, Victorinox, and Henckel). I tried both sharpeners and the steel does an OK job but the ceramic wheels (for "fine sharpening") butchered every blade i tried it on. When I was done sharpening the knives, the blades were jagged and looked like I was trying to cut concrete with them. Save your money on this one.
