4 out of 5 stars KitchenAid KPRA Pasta Roller Attachment   January 30, 2007

Works OK for the most part , but the small cutter does not cut compleatly. The small cutter also seams to gather the pasta, making it hard to seperate.

1 out of 5 stars A Lot Of Work   January 21, 2007

When I used this pasta roller, there was grease on the inside of the roller and it kept getting on the pasta, with no way to clean the inside of it. It was very diffiult to feed the pasta into the roller and the pasta recipe included was too dry. I returned this to Filenes and with the same money, I bought the Ron Popeil pasta maker, which is very easy to uses and requires almost no work on your part. Don't buy this, buy the other Ron pasta maker. With Ron Popeil, you can just through in the ingredients and pasta comes out.

5 out of 5 stars High quality, great results every time   January 18, 2007

Prior to these my only experience was with hand crank pasta rollers many years ago. I too considered the plastic extrusion style pasta makers but feared they would clog up like a Playdough press. Whether that is true or not, after multiple uses of these rollers I have nothing but good things to say. The roller and cutters have worked perfectly for me every single time, and even just holding them in your hand the build quality is immediately apparent. I can recommend these without hesitation.

5 out of 5 stars The very best, fastest way to make pasta   January 17, 2007

Finally, a pasta maker that actually works!
Fresh pasta can be prepared in 10 minutes flat (plus an interlude of 20 minutes for dough resting): 100% semolina or flour pasta is made by first mixing, then doughhook-kneading dry and liquid ingredients 2 minutes, briefly hand-kneading, running dough through rollers, then cutting.
The rollers work perfectly, all the way down to the finest paper thin settings appropriate for dim sum or wonton wrappers. The 2 cutters are both excellent, fully separating the cut strands. The spaghetti cutter has a round cross section for cylindrical spaghetti if rolled to thickness 3; rolling more thinly yields a narrow linguini or even angel hair from this cutter. Nothing has ever stuck, no cleaning required.
The reason the system is so efficient is that both your hands are free to feed and catch the sheets or strands, and with the speed set to 4 on our Artisan model, the dough zips right along. We now think nothing of whipping up an impromptu Italian supper or a midnight snack of Asian fried or soup noodles--the pasta is ready by the time the kettle has boiled!
We've tried extruder types, both stand-alone and Kitchenaid--both are junk, make soft pasta that sticks together. The hand-crank, c-clamp types work for a while, until the first sheet of pasta goes up under the scrapers on the underside of the rollers and springs them out of shape, not to mention tying up one hand on the crank. This one, made by the same Italian manufacturer as the hand-crank units, has spring-loaded nylon scrapers that work.
Just about the best kitchen gadget. And it's loads of family fun.

5 out of 5 stars I can't imagine using anything else to make fresh pasta   January 16, 2007

I've now used this pasta roller/cutter to make linguini and ravioli. I've never made pasta before, but with the high prices of fresh pasta at local grocers, I couldn't wait to get my hands on this to make my own. I did not realize the work that goes into fresh pasta, and I now understand why it is so expensive. That having been said, this attachment to our Kitchenaide made that work very easy, but it still takes technique which you will learn quickly as you go. Our first attempt at storage and freezing didn't quite work very well. We also had lots of questions about the recipes and directions for the ravioli. The dough didn't seem to do what the recipe said it would, and the ravioli didn't quite "stick" like the directions said it would. So this won't make you an instant pasta expert if you are new to making pasta, but now that I know what is involved, I can't imagine trying to use any other equipment to learn on.
