5 out of 5 stars Weber Smoker   October 20, 2003

I purchased my Weber Smokey Mountain Cooker in August 2003 after talking about doing so for years and after looking at many competing models. I am not disappointed. From an engineering prespective it's design is simple and straightforward and it is extremely well built (just compare it to competing models and you will quickly see the difference). By reviewing the Thermometer installation procedures available at "virtualweberbullet" web site, adding an industrial grade thermometer by drilling a small hole in the cover was completed easily.

The results have been fantastic!! I have used the noted web site to learn about techniques to extend the cooking period without having to add charcoal and the rib recipe (The Best Ribs in the Universe) is out of this world! Smoked Turkey, smoked chicken, smoked salmon and smoked almonds have all been easy to prepare and the results outstanding.

I easily designed and constructed a side simple shelf (from two shelf brackets, a 10"x12" piece of oak, and a 1/8"x1" by 30" piece of steel straping available at Home Depot) that can be temporarily attached to the cooking section for use during any smoking session and easily removed so that you can then place the cover on the smoker for storage.

You will not be disappointed with the results of you efforts with this smoker!

I've been extremely satisfied with this product! If you like smoked food and always wondered if you could do it yourself, you gotta go for it. I'm the biggest tightwad on earth and I suggest you just buy it. You won't be disappointed. This smoker is built to last a lifetime. I smoked 25 lbs of Texas briskett for a party and it was so good, it brought a tear to my eye. Be sure to buy a digital thermometer to go with it as it helps take the guesswork out of temperature maintenance. Learn a thing or two from the "VirtualWeberBullet.com."

5 out of 5 stars Best smoker.....at any price!!   October 11, 2003

I've used several cheaper water smokers, offset units, gas grills, you name it. I've used them all to make bar-b-que, however, non of them has produced a better product then the Weber Smokey Mountain. This is the best smoker you can buy at any price. It's perfect for small families and large ones. You can easily prepare 6 to 10 racks of ribs at once. I've done 3 - 7lbs pork butts and a 12 lbs brisket at the same time.

This unit is made to Weber standard, so you know it's well built. Heavy enamel coating that will last a life-time. The effeciency of the cooker is unbelievable. I've done 15 hour cooks without adding any extra fuel.

This is the first smoker (of any type) that I've used that I didn't have to baby sit. Most smokers need almost constant attention in order to maintain proper temp. Not the Weber. It needs virtually no adjustments to keep a steady smoking temperature for hours and hours. You can easily do overnight cooks and sleep easy as the Weber does it's magic.

5 out of 5 stars My first try with my new Weber smoker!   September 29, 2003

I got my Weber smoker last week but was not able to take the time to try it out until this weekend. I bought it because of the many super reviews it got on this site. I had looked over some cheaper models but decided to go for a quality product.

My husband does not like grilled food at all, and that has always held me back from getting a more expensive grill, although I do occasionally grill for myself on a small, cheap grill. Recently, however, I found out that he doesn't mind smoked foods. Apparently it's the char that grilled foods take on that he doesn't like.

So, I decided to try a smoker. I have Raiklen's book HOW TO GRILL, also (it's great), and I used three of his recipes for my initial foray into the world of meat smoking. I made smoked salmon fillet, smoked chicken, and smoked, pulled pork. Everything turned out very, very good, especially so since it was the very first time I tried the smoker!

Initially, I had trouble getting the temp. up to over 200 degrees, but I decided I was skimping on the charcoal. I started up some more charcoal using a starter chimney in my small grill and added it to the Weber when it was glowing. That did the trick. I also stuck a grilling thermometer in one of the air holes on the lid of the Weber and plugged the two other holes up with bunched-up aluminum foil. That was how I kept track of my smoker temp.

So, I am very happy with this product. It was easy to put together, and all the parts were there and good quality. Oh, and my husband liked all the food, too. I will be doing a lot more smoking on weekends when I have a good block of time to devote to it. Now I can smoke meats, and then we can enjoy them all week for lunch.

Thanks to all the previous reviewers for many helpful suggestions about using the smoker.

5 out of 5 stars Best smoker at any price!   July 30, 2003

I've owned a couple of water smokers and have used larger offset smokers. This is, without a doubt, the best unit I've ever used! First of all, it's real quality construction. Baked enamel over stainless steal. Much better quality then most water smokers. Second, it has much better control then any other unit I've ever used. You can really control the temps very easily with the 3 bottom vents. This unit is so efficient that you can do 12 to 15 hour cooks without adding any extra fuel! I just finished a 9 hour cook on a 6 lb brisket flat and never touched the fire. The cooking temps were between 230 and 250 the entire time. The final product was the best brisket I've ever eaten. Bite the bullet and buy this, you won't be sorry. The only thing that needs to be added is a thermometer. However, as steady as this thing cooks I can see why Weber didn't put one on it.
