Sunny, hot Puglia is the ideal home for the primitivo grape. Genetically identical to zinfandel, it shares zin's love for hot weather and its extracted, dark berry flavors. It makes a gorgeous, deep red pasta with a complex, but subtle winey flavor that is great paired with Osso Bucco or any hearty sauce containing beef, lamb, venison, or veal. The hollow tubes are a bit larger than penne and cut straight, rather than on the bias. Spiral grooves help the sauce cling.
